Welcome!

Welcome to B.L.T. Foodies!  Our blog is all about a dietitian, an engineer and a cute blonde (dog) named Lilly. :-)  We love Greenville, SC and all it has to offer -  from bountiful downtown dining to the rolling Appalachian Mountains in our backyard, there is a lot to keep us busy.. and the beach isn't far either!   In the blog, we will share with you our adventures together, both indoors and outdoors.  We hope that you enjoy following us!

We felt it was only appropriate to start our blog with a Bacon Lettuce Tomato Sandwich in honor of our blog's name.  However, we put a little monounsaturated fat spin on it by making it a Bacon, Lettuce, Avocado and Tomato sandwich (with spinach!).

Start with a ripe avocado and sliced tomato

We used turkey bacon to cut back on the saturated fat 


Add a little soup for a side...

And combine!

Servings: 2

Ingredients:
4 slices whole wheat bread
1 pack Trader Joe's Turkey Bacon
1 Beefsteak Tomato
1/2 Avocado, sliced
1-2 cups fresh spinach 

Directions:

1.  Heat a non-stick skillet under medium head.  
2.  Add turkey bacon, about 4-5 slices at a time, until fully cooked ~5-6 minutes.  This may have to be done in 2 batches.
3. Assemble sandwiches with whole wheat bread, 4 turkey bacon slices, 2 slices tomato and about 1/4 of avocado per sandwich.
4. Serve with a salad or some soup on a chilly day!
